Sunday soup night gets repeated over and over again with this tortellini soup recipe and I assure it’ll become a regular in your rotation + the fact it’s hot and ready in under 30 minutes makes this one anyone can whip up:

Sausage and Cheese Tortellini Soup
- 3 cups cooked Italian sausage
- 3 cups frozen cheese tortellini
- 4 cups water
- 1 can evaporated milk [I use the lowfat variety]
- 6 chicken boullion cubes
- 1 tbsp. oregano
- 1 tbsp. parsley
- 1 tbsp. chives
- salt & pepper to taste
- mozzarella and parmesan cheese
Put all ingredients except tortellini in medium size dutch oven and bring to boil. Allow to simmer about 15 minutes. Add tortellini and allow to boil for 8-10 minutes. Sprinkle with mozzarella + parmesan cheese and serve immediately.
