Good Eats: Mimi’s Pina Colada Cake Recipe

Mimi has been making this summertime sweetness for YEARS and now she has got my girls addicted to this pina coloada cake as well… who knew  two oh-so-picky eaters would love ANYTHING and EVERYTHING coconut?!?!?! Scroll down for the step by step recipe!

Hey, I won’t complain one single bit, especially when it involves sweets that taste like warm weather and remind me of a far away tropical paradise:

Pina Colada Cake Recipe

Ingredients

1 white cake mix
3 egg whites
1/3 cup vegetable oil
1 can fat free sweetened condensed milk
1 can frozen pina colada mix
1 8 oz tub of light cool whip
1 package of flaked coconut

Directions
  1. Preheat oven to 350 and bake cake as directed on box instructions
  2. Pull out of oven once done and immediately poke holes all over cake
  3. Mix together can of sweetened condensed milk and frozen pina colada mix and pour all over cake
  4. Place in refrigerator overnight [or at least 8+ hours] to chill
  5. Take out and then cover cake with cool whip as the icing and then top with coconut
