Good Eats | Blackberry Goat Cheese Salad

Side dishes and salads… usually my go-to dish to bring to a friends’ house for a potluck + get together as I know most people are going to sign up for apps or desserts. Let’s be honest, if I’m in a pinch it’s easy to grab one of the salad kits and call it complete, but this blackberry goat cheese salad gets assembled in less than 10 minutes and it is DELISH, no matter what’s on the menu. It doesn’t have to be fancy to be REALLY good!

Beaded Serving Dish | Vintage Wood Serving Set

  • 12 oz of Arugula
  • 4 oz Chèvre Goat Cheese [I like the honey variety from Trader Joes]
  • 2 cups Blackberries
  • 1/4 cup Pistachios [already shelled if possible]
  • Honey Mustard Dressing [homemade would be great, but this variety is AMAZING and low calorie too]

Toss arugula, blackberries and pistachios together. Then use a cheese grader to shred goat cheese and add to salad. Drizzle honey mustard dresses on top and serve immediately!

I will have to try this. Looks yummy! I love the recipe ideas you’ve been posting lately. I tried the Chicken lime enchiladas the other night and they were so good!! My hubby and the girls liked them too!
