fall time treat…chocolate chip pumpkin bread

Like I’ve said before, I am a lover of all things pumpkin and this tasty concoction is another winner in my book! Mix chocolate AND pumpkin and you’ve got one perfect bread…pair it with warm apple cider and it’s even better!
(recipe found via my recipes and modified to eliminate the fat free stuff)

Ingredients
**2 cups sugar
**2 cups canned pumpkin
**1/2 cup canola oil
**1/2 cup vanilla pudding
**4 eggs
**3 cups all-purpose flour
**2 tsp ground cinnamon
**1 teaspoon salt
**1 tsp baking soda
**1.5 cups chocolate chips
**cooking spray

Directions
a. Preheat oven to 350.
b. Combine first 5 ingredients in a large bowl, stirring well with a whisk. Lightly spoon flour into dry measuring cups and level with a knife. Combine flour, cinnamon, salt, and baking soda in a separate bowl, stirring with a whisk. Add flour mixture to pumpkin mixture, stirring until moist. Stir in chocolate chips.
c. Spoon batter into a bread/loaf pan already coated with cooking spray. Bake at 350 for 60-75 minutes and check with toothpick to ensure center comes out clean. Cool 10 minutes on a wire rack, and remove from pans.
d. Serve and enjoy! (FYI: I made a few batches and froze a few to eat later, too!)
