It’s Raining, It’s Pouring…

Uncategorized

February 24, 2011

and yes, I do believe I was snoring. When we jumped drug ourselves out of bed this morning to head to the gym, Jeff said “can you believe that thunderstorm last night?” to which he laughed as he realized I had no recollection of this whatsoever–hehe… and yes, it is nice to sleep like a log. It’s a dreary, but not so dreadful day here in the grand old south–at least it’s warmer, right?

I have not one single topic to write about today so I’ll throw a hunk of randomness in the pot and stir it up for good measure…

1. I found this article at Runner’s World discussing when fruits and vegetables are in season… helpful for what to stock up onin the produce section at your local grocery

2. I am on the hunt for the perfect banana nut bread recipe–random, yes, but I have had a craving and want it now! if you have a recipe or know of someone who does, please send 😉

3. Have you checked out Rhiannon’s {Hey Gorgeous’ author/creator} wedding series yet? So far, we’ve seen the first look, details, balloon release, and a few others–yall, she is incredible and one of the most humble people I have met through blogging. I love our random emails and I think her wedding was FABULOUS!

4. I am ready for another Justin Timberlake CD–I still listen to Future/Sex/Love/Sounds all the time… dear Mr. Micky Mouse Club/NSYNC band man, please do us a favor and sing some more already!
5. Tonight is our book club meeting… we are supposed to have read the first 2 chapters of Crazy Love and I can’t wait to talk all about it–great read so far!
6. And I found this cute little fortune cookie quote and just had to share… I know a lot of us can appreciate 😉

We used the batter this weekend to make a loaf of banana bread. I am sure that you could throw in some nuts and it would still be amazing.

  5. Katelyn says:

  6. I LOVE Starbucks banana bread. Last summer, they were giving away their recipes at the register. I took the banana bread one, and LOVE IT! Here's a blog post I did about it:

  27. Laura J says:

I just started my own blog and stumbled upon yours and now im hooked! Everything you post is so beautiful and I love to read about your wedding planning and health tips in reference to food and exercise. I'm a runner too and I am constantly making over recipes and re-vamping old favorites to a healthier version. This is the best banana nut bread ever:

    1/3 cup vegetable oil
    1/2 cup honey
    1 teaspoon vanilla extract
    2 eggs
    1 cup mashed bananas
1 3/4 cups whole wheat flour
    1/2 teaspoon salt
    1 teaspoon baking soda
    1/4 cup hot water
    1/2 cup chopped walnuts

    1.Preheat oven to 325 degrees F (165 degrees C).
2.In a large bowl, beat oil and honey together. Add eggs, and mix well. Stir in bananas and vanilla. Stir in flour and salt. Add baking soda to hot water, stir to mix, and then add to batter. Blend in chopped nuts. Spread batter into a greased 9×5 inch loaf pan.
3.Bake for 55 to 60 minutes. Cool on wire rack for 1/2 hour before slicing.

**I used egg whites instead of the 2 eggs, and I sprinkled rolled oats on top of the loaf with half an hour left. I sprayed a bit of butter spray over the oats so they toasted a bit nicer. This bread is 100% healthy using honey as the natural sweetner, walnuts for protein and healthy fats (not to mention they improce memory) and the whole wheat flour actually tastes better than white flour.
Calories per serving are about 175 (makes 12 slices). Enjoy!!
