Recipe: Ooey Gooey Butter Cake

Monday, September 20, 2010

For my best friend's birthday last weekend, I wanted to try something a bit different... and Ms. Paula Deen didn't let me down one bit. Granted, this wasn't a healthy dessert by ANY means, but it was tasty and I am happy to report no cake was left behind ;)

1 18 1/4-ounce package yellow cake mix1 egg
8 tablespoons butter, melted

1 8-ounce package cream cheese, softened
2 eggs
1 teaspoon vanilla
8 tablespoons butter, melted
1 16-ounce box powdered sugar

1. Preheat oven to 350 degrees
2. Combine cake mix, egg, and butter and mix well with an electric mixer
3. Pat mixture into the bottom of a lightly greased 13 x 9 baking pan
4. Prepare Filling: In a large bowl, beat cream cheese until smooth, and then add eggs, vanilla, and butter and beat together. Next add the powdered sugar and mix well
5. Spread over cake batter and bake for 40 to 50 minutes--make sure not to over bake as the center should be a little gooey

Serve with vanilla bean ice cream and enjoy!
